1 Scope
This standard is applicable to the milk product enterprises that adopt cow milk (or ewe milk) and its processed products as main raw materials.

3 Terms and Definitions
3.1 Cleaning work area
Work area with higher cleanliness, such as storage, filling and inside packing workshops for naked to-be-packaged half-finished products.
3.2 Quasi-cleaning work area
Work area which the cleanliness is lower than the one of cleaning work area, like pre-treatment workshop for raw materials.
3.3 Commonly work area
Work are which the cleanliness requirement is under the one of quasi-cleaning work area, like milk collecting workshop, raw material storage, packaging material storage, external packing workshop and finished goods storage.
4 Location and Plant Area Surroundings
They shall comply with the relevant regulations of GB 14881.
5 Building and Workshop
5.1 Design and layout
5.1.1 All new, extended and rebuilt engineering projects shall be designed and constructed in accordance with the related requirements of the country.
5.1.2 The layout of building and workshop shall prevent the milk product processing course from cross contamination and contacting toxicant and impurity.
5.1.3 The adequate measures shall be adopted for cleaning work area, and commonly work area in workshop, to prevent cross contamination.
5.2 Internal Building Structure
5.2.1 Roof
5.2.1.1 The indoor roof and roof corners of the places for processing, packaging and storage shall be easy to clean, and to minimize dust accumulation, condensation and shedding of particles. If the roofs of cleaning work area, quasi-cleaning work area and foodstuff exposure place (except milk collection workshop) are the structures prone to accumulate dirt, they should be arranged with smooth and easy-clean ceiling; if they are reinforced concrete structures, the indoor roofs shall be even and free of seam.
5.2.1.2 Flattop roof or ceiling for workshop shall be constructed with innoxious odour-free white or light-colored waterproof materials. if the roof or ceiling is sprayed with painting, the painting shall be mould-proof, unease-shedding and easy-clean.
5.2.1.3 The piping for steam, water and electricity shall not be arranged over the exposed foodstuffs, otherwise, the facilities to collect dust and condensate shall be equipped.
5.2.2 Wall
5.2.2.1 The walls shall be the structures built up with innoxious, odour-free, smooth, waterproof and easy-clean light-colored antiseptic materials.
5.2.2.2 The wall corner and column corner of cleaning work area and quasi-cleaning work area shall be appropriate structured and easy to clean and sterilize.
5.2.3 Door and window
5.2.3.1 Smooth and adsorption-proof materials shall be used for door and window and they shall be easy to clean and sterilize.
5.2.3.2 The door and window in production shop and storage place shall be assembled tight and easy to clean, and they shall be arranged with the facilities to prevent dust, and animal and insect damage.
5.2.3.3 Self-closing door and (or) air curtain (like equipped with auto inductor or door closer) shall be equipped for the entry and exit of cleaning work area and quasi-cleaning work area.
5.2.4 Floor
5.2.4.1 The floor shall be built up with innoxious, odour-free and waterproof materials, and it shall be even, antiskid, flawless and easy to clean and sterilize.
5.2.4.2 The floor exposed to drainage or waste water in working and the floor of the place that frequently wetted or cleaned with water should be acidproof and alkaliproof, and they shall have a certain drainage slope and be equipped with drainage system.
