Food microbiological examination - Sampling and sample processing of wines, cold drinks and frozen drinks
1 Scope
This standard specifies the sampling and sample processing methods of wines, cold drinks and frozen drinks.
This standard is applicable to the sampling and sample processing of wines (including fermented wine and its prepared wine), cold drinks, packaged drinking water (including drinking natural mineral water) and frozen drinks.
2 Equipment and materials
2.1 Sampling tools
The sampling tools shall be made of stainless steel or other materials with appropriate strength, and they shall have smooth surfaces, and rounded corners, but not joints. The sampling tools, including stirring appliances, pipette, sampling scoops and spoons, knives, sampling drills, scissors, tweezers, etc., shall be cleaned and sterilized and kept dry before use.
2.2 Sample container
The material (such as glass, stainless steel, and plastic) and structure of the sample containers shall be able to fully make the samples the original state. The containers and their lids shall be clean, sterile, and dry. The sample containers, including sampling bags, a sampling tubes, sampling bottles, etc., shall have sufficient volume to allow the samples to be thoroughly mixed prior to inspection.
2.3 Other supplies
They may include thermometer, aluminum foil, sealing film, sampling registration form, sterile filter device, alcohol lamp, etc.
3 Sampling
3.1 Sampling principles and plans
The sampling principles and plans shall be implemented in accordance with the requirements of GB 4789.1.
The number (n) of the specimens to be sampled shall meet the requirements of relevant food safety standards. The sampling volume for each sample shall not be less than the volume of the sample for 5 × inspection units, or shall be determined according to the inspection purpose. The requirements for the sampling of one food are specified as follows.
3.2 Wines
3.2.1 The requirements are applicable to fermented wine and its prepared wine, etc.
3.2.2 Individually packaged wines of less than or equal to 1,000 mL: individually packaged wines from the same batch shall be sampled.
3.2.3 Individually packaged wines of more than 1,000 mL: the individual package may be collected, or the liquid shall be shaken or stirred with a sterile rod before sampling to make it uniform, and then a suitable amount of sample may be collected into a single aseptic sampling container.
3.3 Liquid drinks
3.3.1 The requirements are applicable to liquid drinks without ethanol or with an ethanol content not exceeding 0.5% by mass, packaged drinking water (including drinking natural mineral water), and liquid drinks containing solid and semi-solid ingredients, etc.
3.3.2 Individually packaged liquid drinks of less than or equal to 1,000 mL: individually packaged liquid drinks from the same batch shall be sampled.
3.3.3 Individually packaged liquid drinks of more than 1,000 mL: the individual package may be collected, or the liquid shall be shaken or stirred with a sterile rod before sampling to make it uniform, and then a suitable amount of sample may be collected into a single aseptic sampling container.
3.4 Solid drinks
3.4.1 Individually packaged solid drinks of less than or equal to 1,000g: individually packaged solid drinks from the same batch shall be sampled.
3.4.2 Individually packaged solid drinks of more than 1,000g: the individual package may be collected, or a suitable amount of sample may be taken from different parts of the same packaging using the aseptic sampling tool and placed into a single aseptic sampling container.
3.5 frozen drinks
3.5.1 Individually frozen drinks of less than or equal to 1,000g(mL): individually packaged frozen drinks from the same batch shall be sampled.
3.5.2 Individually packaged frozen drinks of more than 1,000g(mL): the individual package may be collected, or a suitable amount of sample may be taken from different parts of the same packaging using the aseptic sampling tool and placed into a single aseptic sampling container.
