本标准规定了用气相色谱法测定食品中反式脂肪酸的条件和详细分析步骤。
本标准适用于植物油和含植物油食品中反式脂肪酸含量的测定；
不适用于动物油脂和含动物油脂食品中反式脂肪酸的测定。本标准样品中反式脂肪酸最低检测限为0.05％（以脂肪计）。
