本标准适用于捕获后未经加工处理的鲜海水鱼、冰鲜海水鱼和仅去内脏而未作其他处理的鲜海水鱼。本标准与GB/T18108—2000相比主要变化如下:
———对“感官要求”的叙述进行了补充完善;
———将“蒸煮试验”纳入“感官要求”中;
———挥发性盐基氮指标删除了对板鳃鱼类的规定;
———增加了甲基汞、铅、镉、多氯联苯、土霉素、磺胺类(总量)、氟甲砜霉素的限量指标;
———删除了汞、六六六、滴滴涕的限量指标。
