In accordance with the requirements of Administrative measures for the treatment of waste oils and fats from catering and kitchen (SHIZHENGFU [2012] No.97), the catering service providers outputting waste oils and fats shall install grease-water separators conforming to the requirements. Shanghai Food Safety Federation, jointly with the concerned research institutes, industrial associations, test agencies, manufacturers and users, develops this association standard with view to standardizing the technical requirements of grease-water separators in catering, improving product quality and technical level, and offering the technical basis for the purchase, installation and daily use of grease-water separators by catering service providers.
This standard is developed in accordance with the rules given in GB/T 1.1 and GB/T 20004.1.

Grease-water separator in catering
1 Scope
This standard specifies the terms and definitions, requirements, test methods, inspection rules, marking, operating instructions, packaging, transportation and storage of grease-water separators in catering (hereinafter referred to as "grease-water separator").
This standard is applicable to the design, manufacturing, installation, commissioning and usage of the grease-water separators in catering whose initial content of animal fats and vegetable oils is not larger than 800mg/L and concentration of suspension is not larger than 600mg/L.

3 Terms and definitions
For the purposes of this document, the following terms and definitions apply.
3.1
grease-water separator in catering
unit, consisted of solid-fluid separating area, grease-water separating area, equipment for collecting grease and residue concentrator, used to separate and collect solid contamination and grease/oil in restaurant wastewater, enabling the treated water to meet the standard of discharge to municipal sewers

rated status
working status of a grease-water separator achieving its normal treatment capacity
3.3
solid-liquid separating area
area, consisted of solid-fluid interception separating area and gravity separating area, where coarse contaminations and fine particles are separated from waste water
3.4
grease-water separating area
area where grease/oil is separated from waste water

equipment for collecting grease
device used to collect the separated oil and grease
3.6
sand discharging area
area, with a bottom connected with a blow-down pipe, used to precipitate and collect solid contamination in the waste water

4 Requirements
4.1 Appearance
4.1.1 Surface of grease-water separators shall have no burr, collision or depression; error of diagonal lines shall not be larger than 5mm.
4.1.2 Grease-water separators made of stainless steel shall have scratch-free surfaces; the ones made of plastic shall have smooth and crack-free surfaces.
4.2 Electrical equipment safety
4.2.1 The buttons, switches, instrumentation and others on the electric control panels of grease-water separators shall be located on the position convenient for operation, and their function marking shall be complete and clear.
4.2.2 Interior parts of electric control for grease-water separator shall feature in reasonable assembly, compact structure, perfect technology and convenient maintenance.
4.2.3 In case of a voltage pulsation of ±10%, a grease-water separator shall be able to work normally.
4.2.4 Dielectric resistance and electric strength of grease-water separators shall meet the requirements of GB 5226.1-2008.
4.2.5 Grease-water separators shall have stable grounding protection and meet the requirements of GB 4706.1-2005.
4.3 General
4.3.1 Grease conservators of grease-water separators shall have functions of invisible liquid level indication and volume measurement or weighing.
4.3.2 Grease-water separators running in a stable status shall have no leakage.
4.3.3 Grease-water separators shall be designed with solid-fluid separating area, grease-water separating area, sand discharging area and odor emission device.
4.4 Performance requirement
4.4.1 The content of the animal fats and vegetable oils in the waste water treated by a grease-water separator shall be less than or equal to 100mg/L.
4.4.2 The concentration of the suspension in the waste water treated by a grease-water separator shall be less than or equal to 250mg/L.
4.4.3 The content of the oil in the grease/oil mixture concentrated by a grease-water separator shall be larger than or equal to 70%, and the grease and oil treated shall be able to discharge to the grease conservator in an automatic way.
