This standard specifies spectrophotometric method for the determination of ascorbic acid in foods.
It is applicable to the determination of reductive-form ascorbic acid in foods.
It is not applicable to the determination of dehydrogenation-form ascorbic acid.
2 Principle
In acetic acid solution, the reaction of ascorbic acid with the fast blue B salt will produce yellow derivatives of oxalyl dihydrazide-2-hydroxy butyl ester. Carry out determination of absorbance at the maximum absorption wavelength of 420nm, and compare the quantitative measurement with reference series.
