本标准修改采用ISO 3657：2002《动植物油脂皂化值的测定》（英文版）。
本标准与ISO 3657：2002的主要差异如下：
——油脂试样制备要求按GB/T 15687（GB/T 15687-1995，eqv ISO 661:1989）。
本标准代替GB/T 5534-1995《动植物油脂皂化值的测定》。
本标准规定了动植物油脂皂化值的测定方法。
本标准适用于精炼动植物油脂和动植物油脂原油。
本标准不适用于含无机酸的产品，除非无机酸能够另行测定。
本标准与GB/T 5534-1995相比较的主要变化如下：
——增加了有关试样制备的内容；
——修改了精密度要求。
