本标准根据《地理标志产品保护规定》与ＧＢ／Ｔ１７９２４《地理标志产品标准通用要求》制定。
本标准代替ＧＢ１９０８８—２００３《原产地域产品　金华火腿》。本标准规定了金华火腿的术语和定义、地理标志产品保护范围、要求、试验方法、检验规则及标志、标签、包装、运输和贮存。
本标准适用于国家质量监督检验检疫行政主管部门根据《地理标志产品保护规定》批准保护的金华火腿。 本标准与ＧＢ１９０８８—２００３相比主要变化如下：
———将标准属性由强制性改为推荐性；
———根据国家质量监督检验检疫总局颁布的《地理标志产品保护规定》，修改了标准中英文名称及相关内容表述；
———修订了金华火腿原、辅材料规定；
———增加了金华火腿加工过程中禁止使用有毒有害物质的规定；
———依据ＧＢ２７３０—２００５《腌腊肉制品卫生标准》，将理化、卫生指标合并为理化指标，并增加了“过氧化值”、“酸价”、“三甲胺氮”、“铅”、“无机砷”、“镉”、“总汞”、“亚硝酸盐残留量”八项指标；
———调整了金华火腿“水分”、“盐分”含量指标；
———修订了金华火腿质量（重量）的指标；
———增加了金华火腿“过氧化值”指标的制样方法；
———调整增加了出厂检验项目；
———在标签中增加了“食用说明”的要求，并给出了“食用说明”的内容。
